Summer, summer, summertime! Time to sit back and unwind. Whether you’ll be unwinding by laying on an a golden sandy beach or on a deck chair in your back garden, cocktails and dip are a must! Guacamole is the quintessential summer dip – it’s light, fresh and guiltless. Grab a dorito and pile on the dip without piling on the pounds – perfect! If you’re looking for something quick, easy, healthy and delicious for summer cookouts or summertime snacking, look no further than guacamole and tortilla chips.
- 1 Avocado (Ripe)
- ½ Lime
- ⅛ Red Onion
- ½ fistful Coriander/Cilantro
- ¼ tsp Salt
- ¼ tsp Cayenne Pepper
- Pinch of Black Pepper
- Slice your avocado into halves and scoop the pulp into a medium-sized bowl.
- Squeeze your lime juice onto the avocados and sprinkle with salt, cayenne and pepper.
- Finely chop your coriander leaves and onion and add to the bowl.
- Using a fork, mash your avocado mixture until you achieve desired consistency.
- Most importantly, enjoy!
I’ve kept my guacamole recipe simple but you can spruce things up by adding garlic, tomato, peppers, fruit or even bacon. Or, if you’re feeling wild, go ahead and throw ’em all in! The possibilities are endless with guacamole and down to individual preference. You can enjoy guacamole with tortilla chips as pictured above or with any other chips of choice. Alternatively, you can use the guacamole as a sandwich spread or sandwich base and it’ll be just as delicious! Note that this recipe serves one, so if you’re making for a party, simply scale up the ingredient quantities up by number of people. It’s bound to be a winner and you’re bound to become very popular!
