Recipe type: Brunch
Cuisine: World
Serves: 6 Sticks
  • Brioche Loaf
  • 1 Medium Egg
  • 50ml Milk (Whole)
  • ½ tsp Ground Nutmeg
  • ¼ tsp Vanilla Bean Paste (or ½ tsp Vanilla Extract)
  • Salted Butter
  • Churro Cinnamon Sugar
  • ¼ tsp Ground Cinnamon
  • 2 tbs Granulated Sugar (or 1 tbs Caster Sugar)
  • Toppings
  • Selection of Fresh Fruit e.g. Bananas, Strawberries, Blueberries
  • Crispy Bacon
  • Maple Syrup
  1. Start by cutting your brioche loaf into two 3cm thick slices.
  2. Cut each slide into thirds lengthways and remove the outer crust. This will give you thick rectangular pieces of bread, I call these sticks.
  3. In a shallow bowl e.g. a pasta bowl, combine the milk, egg, nutmeg and vanilla.
  4. Whisk until properly combined.
  5. Planning ahead, you'll want to prepare your cinnamon sugar now. Simply add your cinnamon to your sugar and mix until properly combined. Once combined, transfer to a flat plate and ensure the cinnamon sugar is evenly distributed across the plate.
  6. In batches of three, dip your brioche sticks into the eggy nutmeg and vanilla milk.
  7. Dip each of the four sides of your "sticks" in for a few seconds so that it is lightly coated but not soaked or too soggy.
  8. Add a tablespoon of salted butter to a warm frying pan.
  9. Depending on your pan size, you should be able to fry three sticks at a time.
  10. Fry the sticks, turning on each of the four sides until they're golden brown on all sides.
  11. Transfer your hot French toast sticks from the pan immediately to your cinnamon sugar and lightly roll the sticks across the plate so that each side is lightly covered with cinnamon sugar.
  12. Repeat the process once more with your remaining three brioche sticks.
  13. Serve your Churro French Toast Sticks with crispy bacon, sliced fruit and a light drizzle of maple syrup if you're feeling frisky.
  14. Most importantly, enjoy and savour each mouthful!
