Cinnamon & Nutmeg Pancakes with Grilled Honey Glazed Bacon & a Fruit Medley

Happy Hump Day – it’s almost the weekend! You know what that means? Breakfast! Here’s something to look forward to: cinnamon and nutmeg pancakes with grilled honey glazed bacon and a strawberry banana medley.

I decided I was a little bored of traditional pancakes and wanted to spice things up – so that’s exactly what I did. And oh were these bad boys were good! Seriously good. Like close your eyes, savour and foodgasm good! And don’t get me started on the bacon. We all know bacon on its own is good but, slathered with honey and set under the grill, is out-of-this-world-good. Then there’s the fruit medley, if I’m honest that was more for my conscience than anything else…but it worked perfectly. To finish off, I topped the pancakes with golden syrup and basked in my awesomeness.

The only phrase fitting of description for this breakfast is decadent perfection. Yes, it’s that good. This is the perfect breakfast for a day of indulgence and with the three-day weekend ahead, timing couldn’t be better.

Cinnamon & Nutmeg Pancakes with Grilled Honey Glazed Bacon and a Fruit Medley

The perfect breakfast for a day of indulgence.

Ingredients
  • For the Cinnamon & Nutmeg Pancakes
  • 1½ cups Plain Flour
  • 3 tsp Baking Powder
  • 1 tsp Himalayan Pink Salt
  • ½ tsp Cinnamon
  • ½ Nutmeg
  • 1 tsp Honey
  • 1 tsp Lemon Juice
  • 1¼ cups Whole Milk
  • 1 tsp Vanilla
  • 1 Medium Egg
  • 3 tbsp Melted Butter

    For the Grilled Honey Glazed Bacon
  • 3 Smoked Bacon Strips per person (entirely down to your love of bacon!)
  • ⅓ tsp Honey (x6)

    For the Fruit Medley
  • 6 Strawberries (optional)
  • 1 Banana (optional)

    Topping
  • Golden Syrup
Instructions
  1. For the Cinnamon & Nutmeg Pancakes
  2. Sift the flour, baking powder, salt, cinnamon and nutmeg together in a large bowl.
  3. Add the milk, vanilla, egg, lemon, honey and melted butter to the bowl and whisk.
  4. Heat a frying pan over medium heat. Add a teaspoon of butter to the pan to melt.
  5. Once melted, use a medium-sized serving ladle (or judge by eye) and pour in a circular layer of batter roughly 10cm in diameter - I go for this size because it's easy to flip.
  6. You'll find that after a few minutes, the batter at the edge of the pancake will look dry. When most of the pancake looks 'dry', which is usually after about 5 mins, flip that bad boy but try not to press on the pancake otherwise you'll lose the fluffiness.
  7. Once flipped, leave for about 3 minutes. You'll know it's done when each side is a beautiful golden-brown colour.
  8. Repeat for as many pancakes as you can handle! A neat trick for keeping them warm while frying is to put the pancakes in the oven on low heat.

    For the Grilled Honey Glazed Bacon
  9. Turn the grill on to medium heat.
  10. Line a baking tray with foil and grease with butter.
  11. Lay your bacon strips in a single layer. Apply a ⅓ teaspoon of honey to the top side each bacon strip.
  12. Put under the grill for 10 minutes.
  13. Turn the bacon strips. Apply a ⅓ teaspoon of honey to the other side of each bacon strip and put under the grill for another 10 minutes.

    For the Fruit Medley
  14. Take your fruit of choice and slice into desired shapes and sizes. My fruits of choice were banana and strawberry although blueberry or any other fruit would be great too!
